Early-flowering plants produce large blooms, seed umbels, and foliage on long stems, making this variety preferred for cut flowers and pickling. The flowers can be used to garnish potato salad, in green salads, and pickles. When broken into florets they can be mixed into cheese spreads and even omelets.
